Ingredients - Serves 8
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Dark chocolate - 1 cup, chopped
- Ricotta cheese - 2 cups
- Eggs - 1 large
- Unsalted butter - 1 cup, chilled and cut into small pieces
- Sugar - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, half of the sugar, and the salt. Add the butter and mix until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- In another bowl, combine the ricotta, the remaining sugar, the chocolate, and the vanilla. Mix until well combined.
- On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
- Spread the ricotta mixture over the dough.
- Bake for 45 minutes, or until the crust is golden and the filling is set.
- Allow to cool before serving.
