Torta Caprese
Torta Caprese is a traditional Italian chocolate and almond or walnut cake named for the island of Capri from which it originates.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Eggs - 5
- Almonds - 200 grams, ground
- Sugar - 200 grams
- Butter - 200 grams
- Dark chocolate - 200 grams
Let's Get Started
- Preheat the oven to 180°C (350°F). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Melt the chocolate and butter together in a double boiler or microwave. Let cool slightly.
- Separate the egg yolks and whites. Beat the yolks with the sugar until pale and creamy.
- Beat the egg whites to stiff peaks in a separate bowl.
- Fold the melted chocolate mixture and ground almonds into the yolk mixture.
- Gently fold in the beaten egg whites, keeping as much volume as possible.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove the sides of the pan and let cool completely.
- Dust the top of the cake with powdered sugar before serving.
