Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 180°C (350°F). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Melt the chocolate and butter together in a double boiler or microwave. Let cool slightly.
  3. Separate the egg yolks and whites. Beat the yolks with the sugar until pale and creamy.
  4. Beat the egg whites to stiff peaks in a separate bowl.
  5. Fold the melted chocolate mixture and ground almonds into the yolk mixture.
  6. Gently fold in the beaten egg whites, keeping as much volume as possible.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then remove the sides of the pan and let cool completely.
  10. Dust the top of the cake with powdered sugar before serving.
