  1. Heat the oil in a large pan over medium heat.
  2. Add the cumin seeds and let them crackle for a few seconds.
  3. Add the potatoes and cauliflower to the pan and stir well to coat in the oil and cumin seeds.
  4. Add the turmeric, garam masala, coriander powder, red chili powder, and salt. Stir well to combine.

  6. Stir occasionally to prevent the vegetables from sticking to the pan.
  7. Once the vegetables are cooked, garnish with fresh coriander leaves.
  8. Serve the Aloo Gobi with warm naan bread or rice.
