Aloo Gobi

- Fresh coriander leaves - For garnish
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Cauliflower - 1 medium, cut into florets
- Potatoes - 2 medium, cubed
Let's Get Started
- Heat the oil in a large pan over medium heat.
- Add the cumin seeds and let them crackle for a few seconds.
- Add the potatoes and cauliflower to the pan and stir well to coat with the oil and cumin seeds.
- Add the turmeric, garam masala, coriander powder, red chili powder, and salt. Stir well to combine.
- Cover the pan and let it cook on low heat for about 20 minutes, or until the potatoes and cauliflower are tender. Stir occasionally to prevent sticking.
- Once the vegetables are cooked, increase the heat to high and stir-fry for a few minutes to get a little bit of char on the vegetables.
- Garnish with fresh coriander leaves before serving.
