  3. Add the potatoes and cauliflower to the pan and stir well to coat with the oil and cumin seeds.
  4. Add the turmeric, garam masala, coriander powder, red chili powder, and salt. Stir well to combine.
  5. Cover the pan and let it cook on low heat for about 20 minutes, or until the potatoes and cauliflower are tender. Stir occasionally to prevent sticking.
  6. Once the vegetables are cooked, increase the heat to high and stir-fry for a few minutes to get a little bit of char on the vegetables.
  7. Garnish with fresh coriander leaves before serving.
