  1. Heat oil in a large pan over medium heat.
  2. Add the chopped onion and cook until golden brown.

  4. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  5. Add diced potatoes and cauliflower florets. Stir to coat them with the spices.
  6. Cover the pan and cook for about 15 minutes, or until the potatoes and cauliflower are tender.
  7. Add chopped tomatoes and garam masala. Cook for another 2-3 minutes.
  8. Garnish with fresh cilantro and serve hot with rice or roti.
