Aloo Gobi
Aloo Gobi is a classic Indian dish made with potatoes and cauliflower cooked in a flavorful blend of spices.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chili - 1, finely chopped
- Tomato - 1 large, chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Cauliflower - 1 small head, cut into florets
- Potatoes - 2 medium, peeled and diced
Let's Get Started
- Heat oil in a large pan over medium heat.
- Add the chopped onion and cook until golden brown.
- Add minced garlic, grated ginger, and green chili. Cook for 1-2 minutes.
- Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
- Add diced potatoes and cauliflower florets. Stir to coat them with the spices.
- Cover the pan and cook for about 15 minutes, or until the potatoes and cauliflower are tender.
- Add chopped tomatoes and garam masala. Cook for another 2-3 minutes.
- Garnish with fresh cilantro and serve hot with rice or roti.
