Aligot
Aligot is a dish made from cheese blended into mashed potatoes that is a speciality from the Aveyron area in southern France. This dish is a perfect comfort food.
Ingredients - Serves 4
- Salt and pepper - To taste
- Tomme cheese - 500g, grated
- Heavy cream - 1/4 cup
- Butter - 50g
- Garlic - 2 cloves, minced
- Potatoes - 1 kg, peeled and cut into chunks
Let's Get Started
- Place the potatoes in a large pot, cover with water, and bring to a boil. Cook until the potatoes are tender, about 20 minutes.
- Drain the potatoes and return them to the pot. Add the garlic, butter, and cream and mash until smooth.
- Stir in the cheese, a handful at a time, until it is all incorporated and the potatoes are stretchy.
- Season with salt and pepper to taste.
- Serve the aligot hot, as a side dish with sausages or roast meat.
