Alambres are a delicious Mexican dish made with grilled meat, vegetables, and melted cheese.
Ingredients - Serves 4
- Guacamole - For serving
- Salsa - For serving
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Tortillas - 8, small
- Cheddar cheese - 1 cup, shredded
- Bacon - 4 slices, cooked and crumbled
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Chicken breast - 2, boneless and skinless, cut into strips
Let's Get Started
- Preheat the grill to medium-high heat.
- In a bowl, marinate the chicken strips with olive oil, salt, and pepper.
- Thread the marinated chicken, bell peppers, and onion onto skewers.
- Grill the skewers for about 10-12 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the skewers from the grill and let them rest for a few minutes.
- Heat the tortillas on the grill or stovetop until warm and pliable.
- Place a tortilla on a plate and top with a portion of the grilled chicken, vegetables, crumbled bacon, and shredded cheese.
- Fold the tortilla in half and repeat with the remaining tortillas and ingredients.
- Serve the alambres with salsa and guacamole on the side.
