Air Fryer Breakfast Hash
This delicious and easy breakfast hash is made in the air fryer, resulting in crispy potatoes, savory sausage, and perfectly cooked eggs.
Ingredients - Serves 2
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Cooked sausage - 4 ounces, crumbled
- Onion - 1/2, diced
- Bell pepper - 1, diced
- Potatoes - 2 medium, diced
Let's Get Started
- Preheat the air fryer to 400°F (200°C).
- In a bowl, toss together the diced potatoes, bell pepper, onion, cooked sausage, olive oil, salt, and pepper.
- Transfer the mixture to the air fryer basket and spread it out in an even layer.
- Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are crispy and golden brown.
- Create 4 wells in the cooked hash mixture and crack an egg into each well.
- Return the basket to the air fryer and cook for an additional 5 minutes, or until the eggs are cooked to your desired doneness.
