  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, toss together the diced potatoes, bell pepper, onion, cooked sausage, olive oil, salt, and pepper.
  3. Transfer the mixture to the air fryer basket and spread it out in an even layer.
  4. Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are crispy and golden brown.
  5. Create 4 wells in the cooked hash mixture and crack an egg into each well.
  6. Return the basket to the air fryer and cook for an additional 5 minutes, or until the eggs are cooked to your desired doneness.
  7. Carefully remove the basket from the air fryer and sprinkle the fresh parsley over the breakfast hash.
