Afritada
Chicken Afritada is a Filipino tomato-based stew made with chicken, potatoes, carrots, bell peppers, and peas.
Ingredients - Serves 6
- Cooking oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaves - 2
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken broth - 1 cup
- Tomato sauce - 1 cup
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Peas - 1 cup
- Bell peppers - 2 medium, sliced
- Carrots - 2 medium, peeled and sliced
- Potatoes - 2 medium, peeled and cubed
- Chicken - 1.5 kg, cut into serving pieces
Let's Get Started
- Heat the cooking oil in a large pot or pan over medium heat.
- Sauté the garlic and onion until fragrant and translucent.
- Add the chicken pieces and cook until lightly browned.
- Pour in the tomato sauce, chicken broth, soy sauce, and fish sauce. Stir to combine.
- Add the bay leaves and season with salt and pepper to taste.
- Cover the pot and simmer for 20 minutes, or until the chicken is cooked through.
- Add the potatoes, carrots, bell peppers, and peas. Stir to combine.
- Cover the pot again and continue to simmer for another 10-15 minutes, or until the vegetables are tender.
- Adjust the seasoning if needed.
- Serve hot with steamed rice.
