Ingredients - Serves 6

Let's Get Started

  1. In a large pot, boil the assorted meat with salt and seasoning cubes until tender.
  2. Add the stockfish and dry fish to the pot and continue boiling for another 10 minutes.
  3. In a separate pot, boil the palm fruit extract with water for about 20 minutes, then strain to remove any residue.
  4. Add the strained palm fruit extract to the pot with the meat and fish.
  5. Add the chopped onions, red bell pepper, scotch bonnet pepper, crayfish, and seasoning cubes to the pot.
  6. Simmer for 30 minutes, stirring occasionally.
  7. Add the chopped uziza leaves and utazi leaves to the pot and simmer for another 5 minutes.
  8. Finally, add the palm oil and stir well. Cook for an additional 5 minutes.
  9. Serve hot with your choice of swallow (e.g., pounded yam, fufu, or eba).
