Afia Efere
Afia Efere is a delicious Nigerian soup made with palm fruit extract, assorted meat, and vegetables.
Ingredients - Serves 6
- Water - 4 cups
- Palm oil - 1/4 cup
- Salt - To taste
- Seasoning cubes - 2
- Scotch bonnet pepper - 2, chopped
- Red bell pepper - 1, chopped
- Onions - 1 medium, chopped
- Utazi leaves - 2 leaves, sliced
- Uziza leaves - 1 cup, chopped
- Crayfish - 2 tablespoons
- Dry fish - 100g
- Stockfish - 100g
- Assorted meat (beef, goat, or chicken) - 500g
- Palm fruit extract - 2 cups
Let's Get Started
- In a large pot, boil the assorted meat with salt and seasoning cubes until tender.
- Add the stockfish and dry fish to the pot and continue boiling for another 10 minutes.
- In a separate pot, boil the palm fruit extract with water for about 20 minutes, then strain to remove any residue.
- Add the strained palm fruit extract to the pot with the meat and fish.
- Add the chopped onions, red bell pepper, scotch bonnet pepper, crayfish, and seasoning cubes to the pot.
- Simmer for 30 minutes, stirring occasionally.
- Add the chopped uziza leaves and utazi leaves to the pot and simmer for another 5 minutes.
- Finally, add the palm oil and stir well. Cook for an additional 5 minutes.
- Serve hot with your choice of swallow (e.g., pounded yam, fufu, or eba).
