Tamales Mudos
Tamales Mudos are a traditional Guatemalan dish, usually served during special occasions and holidays. They are called 'mute' because they do not have any filling inside.
Ingredients - Serves 20
- Tomato - 1, sliced
- Green bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Banana leaves - 20, cut into squares
- Water - 6 cups
- Lard - 1 cup
- Salt - 1 tablespoon
- Rice flour - 1 cup
- Corn dough - 2 pounds
Let's Get Started
- In a large bowl, mix the corn dough, rice flour, and salt together.
- In a separate bowl, beat the lard until it is creamy.
- Gradually add the lard to the dough mixture, mixing well after each addition.
- Slowly add the water to the dough, mixing well until the dough is smooth.
- Place a banana leaf square on a flat surface and spoon a portion of the dough into the center.
- Fold the banana leaf over the dough, wrapping it completely.
- Repeat with the remaining dough and banana leaves.
- Place the wrapped tamales in a large steamer and steam for about 2 hours, or until the dough is firm.
- Serve the tamales hot, garnished with slices of red and green bell pepper and tomato.
