Let's Get Started

  1. In a large bowl, mix the corn dough, rice flour, and salt together.
  2. In a separate bowl, beat the lard until it is creamy.
  3. Gradually add the lard to the dough mixture, mixing well after each addition.
  4. Slowly add the water to the dough, mixing well until the dough is smooth.
  5. Place a banana leaf square on a flat surface and spoon a portion of the dough into the center.
  6. Fold the banana leaf over the dough, wrapping it completely.
  7. Repeat with the remaining dough and banana leaves.
  8. Place the wrapped tamales in a large steamer and steam for about 2 hours, or until the dough is firm.
  9. Serve the tamales hot, garnished with slices of red and green bell pepper and tomato.
