Aachener Printen
Aachener Printen are a type of Lebkuchen originating from the city of Aachen in Germany. They are made from a variety of spices and honey.
Ingredients - Serves 20
- Potash (potassium carbonate) - 1 teaspoon, dissolved in a little water
- Nutmeg - 1/2 teaspoon
- Anise - 1 teaspoon
- Cloves - 1 teaspoon
- Cinnamon - 1 tablespoon
- Flour - 500g
- Butter - 50g
- Brown sugar - 200g
- Honey - 250g
Let's Get Started
- Heat the honey, sugar and butter in a pan until the sugar has dissolved.
- Mix the flour with the spices in a large bowl.
- Add the warm honey mixture and the dissolved potash to the flour mixture and knead until a smooth dough forms.
- Wrap the dough in cling film and leave to rest at room temperature for at least 2 hours, or overnight.
- Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
- Roll out the dough to a thickness of about 1 cm and cut into rectangles.
- Place the rectangles on the baking tray and bake for 15 minutes, or until golden brown.
- Allow the Printen to cool completely before serving. They will harden as they cool.
