Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a pan over medium heat, then stir in the flour and cook for 2 minutes.
  2. Gradually whisk in the milk until smooth and thickened.
  3. Stir in the ham, nutmeg, salt, and pepper, then cool.
  4. Shape the mixture into small cylinders, then chill for at least 2 hours.
  5. Dip each croquette into the beaten egg, then roll in the breadcrumbs.
  6. Heat the oil in a deep fryer or large, deep saucepan to 180°C.
  7. Fry the croquettes in batches for 2-3 minutes, or until golden brown and crisp.
  8. Drain on kitchen paper, then serve hot.
