Jamon Croquetas
These delicious Spanish ham croquettes are creamy on the inside and crispy on the outside. They are a popular tapas dish in Spain.
Ingredients - Serves 4
- Olive oil - For frying
- Breadcrumbs - 200g
- Eggs - 2, beaten
- Salt and pepper - To taste
- Nutmeg - A pinch
- Jamon serrano - 100g, finely chopped
- Milk - 500ml
- Flour - 75g
- Butter - 50g
Let's Get Started
- Melt the butter in a pan over medium heat, then stir in the flour and cook for 2 minutes.
- Gradually whisk in the milk until smooth and thickened.
- Stir in the ham, nutmeg, salt, and pepper, then cool.
- Shape the mixture into small cylinders, then chill for at least 2 hours.
- Dip each croquette into the beaten egg, then roll in the breadcrumbs.
- Heat the oil in a deep fryer or large, deep saucepan to 180°C.
- Fry the croquettes in batches for 2-3 minutes, or until golden brown and crisp.
- Drain on kitchen paper, then serve hot.
