Quenelles de Brochet
Quenelles de Brochet is a classic French dish, featuring smooth and creamy pike dumplings served in a rich lobster sauce.
Ingredients - Serves 4
- Lobster bisque - 500 ml
- Salt and pepper - To taste
- Nutmeg - A pinch
- Eggs - 2
- Milk - 250 ml
- Flour - 50 grams
- Butter - 50 grams
- Pike fillet - 500 grams
Let's Get Started
- Preheat the oven to 180°C (350°F).
- Melt the butter in a saucepan, add the flour and cook for a few minutes.
- Gradually add the milk, stirring constantly until you get a thick béchamel sauce. Remove from heat.
- Blend the pike fillet in a food processor until smooth, then add to the béchamel sauce.
- Add the eggs, nutmeg, salt and pepper to the mixture and stir well.
- Shape the mixture into quenelles using two spoons and place them on a buttered baking dish.
- Bake for about 20 minutes, or until the quenelles are puffed and golden.
- While the quenelles are baking, heat the lobster bisque in a saucepan.
- Serve the quenelles hot, covered with the lobster bisque.
