Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 180°C (350°F).
  2. Melt the butter in a saucepan, add the flour and cook for a few minutes.
  3. Gradually add the milk, stirring constantly until you get a thick béchamel sauce. Remove from heat.
  4. Blend the pike fillet in a food processor until smooth, then add to the béchamel sauce.
  5. Add the eggs, nutmeg, salt and pepper to the mixture and stir well.
  6. Shape the mixture into quenelles using two spoons and place them on a buttered baking dish.
  7. Bake for about 20 minutes, or until the quenelles are puffed and golden.
  8. While the quenelles are baking, heat the lobster bisque in a saucepan.
  9. Serve the quenelles hot, covered with the lobster bisque.
