Zarzuela de Mariscos
Zarzuela de Mariscos is a traditional Spanish seafood stew, brimming with shrimp, mussels, and fish in a flavorful tomato broth.
Ingredients - Serves 4
- Parsley - For garnish
- Salt and pepper - To taste
- White fish fillets - 1 pound
- Mussels - 1 pound, cleaned and debearded
- Shrimp - 1 pound, peeled and deveined
- Saffron threads - A pinch
- Fish stock - 2 cups
- White wine - 1 cup
- Red bell pepper - 1, chopped
- Tomatoes - 2, peeled and chopped
- Garlic - 4 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the tomatoes and red bell pepper and cook for another 5 minutes.
- Pour in the white wine and fish stock, then add the saffron. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the shrimp, mussels, and fish to the pot. Cover and cook for 10 minutes, or until the seafood is cooked through.
- Season with salt and pepper to taste.
- Serve the Zarzuela de Mariscos hot, garnished with parsley.
