Yellow Curry
This aromatic and flavorful yellow curry is made with a blend of spices, vegetables, and coconut milk.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Fish sauce - 2 tablespoons
- Green peas - 1/2 cup
- Cauliflower florets - 1 cup
- Bell pepper - 1, sliced
- Potato - 2, diced
- Carrot - 2, sliced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Vegetable oil - 2 tablespoons
- Coconut milk - 1 can (400ml)
- Yellow curry paste - 2 tablespoons
Let's Get Started
- Heat vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and ginger. Sauté until fragrant and onions are translucent.
- Add the yellow curry paste and cook for 1-2 minutes, stirring constantly.
- Add the sliced carrots, diced potatoes, bell pepper, cauliflower florets, and green peas. Stir to coat the vegetables with the curry paste.
- Pour in the coconut milk and bring to a simmer. Cook for 15-20 minutes, or until the vegetables are tender.
- Stir in the fish sauce, sugar, and lime juice. Taste and adjust the seasoning if needed.
- Serve the yellow curry over steamed rice or with naan bread.
- Garnish with fresh cilantro before serving.
