Let's Get Started

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
  2. In a large pot, bring water to a boil. Drain the soaked rice and add it to the pot. Cook the rice over medium heat for about 20 minutes, or until it becomes sticky and fully cooked.
  3. While the rice is cooking, season the chicken thighs with fish sauce, soy sauce, sugar, and salt. Let them marinate for 15 minutes.
  4. Heat a grill or grill pan over medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side, or until they are cooked through and have a nice char.
  5. Remove the chicken from the grill and let it rest for a few minutes. Then, shred the chicken meat into bite-sized pieces.
  6. To serve, divide the sticky rice among serving plates. Top each plate with shredded chicken, scallions, fried shallots, cilantro, and crushed peanuts.
  7. Enjoy the Xoi Ga while it's still warm!
