Xoi Ga
Xoi Ga is a traditional Vietnamese dish made with sticky rice and chicken. It is often served as a hearty breakfast or a satisfying lunch.
Ingredients - Serves 4
- Roasted peanuts - 1/4 cup, crushed
- Cilantro - 1/4 cup, chopped
- Fried shallots - 1/4 cup
- Scallions - 4, thinly sliced
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Fish sauce - 2 tablespoons
- Chicken thighs - 4, bone-in and skin-on
- Sticky rice - 2 cups
Let's Get Started
- Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- In a large pot, bring water to a boil. Drain the soaked rice and add it to the pot. Cook the rice over medium heat for about 20 minutes, or until it becomes sticky and fully cooked.
- While the rice is cooking, season the chicken thighs with fish sauce, soy sauce, sugar, and salt. Let them marinate for 15 minutes.
- Heat a grill or grill pan over medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side, or until they are cooked through and have a nice char.
- Remove the chicken from the grill and let it rest for a few minutes. Then, shred the chicken meat into bite-sized pieces.
- To serve, divide the sticky rice among serving plates. Top each plate with shredded chicken, scallions, fried shallots, cilantro, and crushed peanuts.
