Xoi
Xoi is a traditional Vietnamese dish made from sticky rice. It can be served as a main course or a side dish.
Ingredients - Serves 4
- Scallions - 2, thinly sliced
- Dried shrimp - 1/4 cup
- Fried shallots - 2 tablespoons
- Sesame seeds - 2 tablespoons
- Salt - 1/2 teaspoon
- Coconut milk - 1 cup
- Water - 2 cups
- Glutinous rice - 2 cups
Let's Get Started
- Rinse the glutinous rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice and water. Let it soak for at least 30 minutes.
- Drain the rice and transfer it to a steamer basket. Steam the rice over high heat for 30 minutes, or until it becomes soft and sticky.
- In a small saucepan, heat the coconut milk over low heat. Stir in the salt until dissolved.
- Once the rice is cooked, transfer it to a large bowl. Pour the coconut milk mixture over the rice and gently mix until well combined.
- In a dry skillet, toast the sesame seeds over medium heat until golden brown. Set aside.
- In the same skillet, fry the dried shrimp until crispy. Remove from heat and set aside.
- Serve the xoi hot, topped with fried shallots, toasted sesame seeds, dried shrimp, and sliced scallions.
