Ingredients - Serves 4

Let's Get Started

  1. Rinse the glutinous rice under cold water until the water runs clear.
  2. In a large pot, combine the rinsed rice and water. Let it soak for at least 30 minutes.
  3. Drain the rice and transfer it to a steamer basket. Steam the rice over high heat for 30 minutes, or until it becomes soft and sticky.
  4. In a small saucepan, heat the coconut milk over low heat. Stir in the salt until dissolved.
  5. Once the rice is cooked, transfer it to a large bowl. Pour the coconut milk mixture over the rice and gently mix until well combined.
  6. In a dry skillet, toast the sesame seeds over medium heat until golden brown. Set aside.
  7. In the same skillet, fry the dried shrimp until crispy. Remove from heat and set aside.
  8. Serve the xoi hot, topped with fried shallots, toasted sesame seeds, dried shrimp, and sliced scallions.
