Teochew Porridge
Teochew porridge, also known as rice congee, is a comforting and versatile dish commonly enjoyed for breakfast or as a light meal. It is made by simmering rice in water or broth until it becomes a thick and creamy porridge.
Ingredients - Serves 4
- Salted vegetables - 1/4 cup, chopped
- Fried anchovies - 1/4 cup
- Soy sauce - 2 tablespoons
- Fried shallots - 2 tablespoons
- Scallions - 2, chopped
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1-inch piece, sliced
- Salt - 1 teaspoon
- Water - 6 cups
- Rice - 1 cup
Let's Get Started
- Rinse the rice under cold water until the water runs clear.
- In a large pot, combine the rice, water, salt, ginger, and garlic. Bring to a boil over high heat.
- Reduce the heat to low and simmer, partially covered, for about 1 hour or until the rice has broken down and the porridge has thickened.
- Stir occasionally to prevent sticking and add more water if needed.
- Remove the ginger slices and season the porridge with sesame oil.
- Serve the Teochew porridge hot, garnished with chopped scallions, fried shallots, soy sauce, fried anchovies, and salted vegetables.
- You can also serve it with various side dishes such as braised tofu, steamed fish, pickled vegetables, or preserved eggs.
