Let's Get Started

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, combine the rice, water, salt, ginger, and garlic. Bring to a boil over high heat.
  3. Reduce the heat to low and simmer, partially covered, for about 1 hour or until the rice has broken down and the porridge has thickened.
  4. Stir occasionally to prevent sticking and add more water if needed.
  5. Remove the ginger slices and season the porridge with sesame oil.
  6. Serve the Teochew porridge hot, garnished with chopped scallions, fried shallots, soy sauce, fried anchovies, and salted vegetables.
  7. You can also serve it with various side dishes such as braised tofu, steamed fish, pickled vegetables, or preserved eggs.
