Wild Rice Pilaf
A hearty and flavorful dish, this wild rice pilaf is a perfect side for any main course.
Ingredients - Serves 6
- Parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Celery - 2 stalks, finely chopped
- Onion - 1, finely chopped
- Butter - 2 tablespoons
- Chicken broth - 4 cups
- Wild rice - 1 cup
Let's Get Started
- Rinse the wild rice under cold water.
- In a large saucepan, bring the chicken broth to a boil. Add the wild rice, reduce the heat to low, cover and simmer for 45 minutes, or until the rice is tender and has absorbed most of the broth.
- While the rice is cooking, melt the butter in a skillet over medium heat. Add the onion, celery, and garlic, and cook until the vegetables are soft.
- When the rice is done, stir in the cooked vegetables and season with salt and pepper. Cook for an additional 5 minutes, until everything is well combined.
- Sprinkle with chopped parsley before serving.
