Wild Mushroom Stew

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the mushrooms and cook until they release their liquid and start to brown, about 10 minutes.
  4. Add the carrots, potatoes, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
  5. Stir in the heavy cream and cook for another 5 minutes, until the stew is heated through.
  6. Serve the stew hot, with crusty bread on the side if desired.
