Wild Mushroom Soup

Ingredients - Serves 4
- Cream - 1 cup
- Vegetable broth - 4 cups
- Flour - 2 tablespoons
- Salt and pepper - To taste
- Thyme - 1 teaspoon, fresh
- Mixed wild mushrooms - 500 grams, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the mushrooms, thyme, salt, and pepper. Cook until the mushrooms are soft, about 10 minutes.
- Sprinkle the flour over the mushrooms and stir to combine.
- Slowly add the vegetable broth, stirring constantly to prevent lumps.
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
- Stir in the cream and heat through.
- Serve the soup hot, garnished with fresh thyme if desired.
