Ingredients - Serves 4
- Vanilla extract - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Honey - 2 tablespoons
- Milk - 1 1/4 cups
- Egg - 1
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- Whole wheat flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the whole wheat flour, baking powder, and salt.
- In a separate bowl, beat the egg and then add the milk, honey, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
- Repeat with the remaining batter, adding more oil or cooking spray as needed.
- Serve the pancakes warm with your favorite toppings, such as fresh fruit, maple syrup, or yogurt.
