Western Scramble
A hearty breakfast dish with eggs, bell peppers, onions, and ham, topped with cheddar cheese.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cheddar cheese - 1 cup, shredded
- Ham - 1 cup, diced
- Onion - 1, diced
- Bell peppers - 2, diced
- Eggs - 8
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the bell peppers and onion and cook until softened, about 5 minutes.
- Add the ham and cook until heated through, about 2 minutes.
- In a separate bowl, beat the eggs and season with salt and pepper.
- Pour the eggs over the ham and vegetables in the skillet.
- Cook, stirring occasionally, until the eggs are scrambled and fully cooked, about 5 minutes.
- Sprinkle the cheese over the top of the eggs and cover the skillet. Let sit for a minute or two until the cheese is melted.
- Serve the scramble hot, with toast or hash browns on the side if desired.
