Warm Bacon, Onion, and Spinach Salad

Ingredients - Serves 4
- Salt and pepper - To taste
- Balsamic vinegar - 2 tablespoons
- Olive oil - 2 tablespoons
- Spinach - 4 cups, fresh
- Red onion - 1 medium, thinly sliced
- Bacon - 4 slices
Let's Get Started
- Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion and cook until caramelized, about 10 minutes.
- While the onion is cooking, place the spinach in a large bowl.
- Crumble the cooked bacon and add it to the bowl with the spinach.
- Once the onion is caramelized, add the olive oil and balsamic vinegar to the skillet and stir to combine.
