Walnut Shrimp
This is a popular Chinese dish where crispy shrimp is tossed in a creamy sauce and topped with candied walnuts.
Ingredients - Serves 4
- Vegetable oil - For frying
- Lemon juice - 1 tablespoon
- Honey - 1 tablespoon
- Condensed milk - 2 tablespoons
- Mayonnaise - 1/4 cup
- Sugar - 1/2 cup
- Water - 1 cup
- Walnuts - 1 cup
- Cornstarch - 1/2 cup
- Egg whites - 2
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a medium saucepan, combine water and sugar. Bring to a boil and add the walnuts. Boil for 2 minutes, then drain and place walnuts on a baking sheet to dry.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- In a medium bowl, whisk together the egg whites and cornstarch until frothy. Add the shrimp and toss to coat.
- Fry the shrimp in the hot oil until golden and crispy. Remove with a slotted spoon and drain on paper towels.
- In a medium bowl, mix together the mayonnaise, condensed milk, honey, and lemon juice. Add the fried shrimp and toss to coat with the sauce.
- Serve the shrimp on a platter and sprinkle the candied walnuts on top.
