Twigim

Ingredients - Serves 4
- Vegetable oil - For deep frying
- Salt - 1/2 teaspoon
- Water - 1 cup, ice cold
- Tempura batter mix - 1 cup
- Vegetables - 2 cups (like sweet potato, zucchini, mushrooms, etc.)
- Shrimp - 12, peeled and deveined
Let's Get Started
- Prepare the shrimp and vegetables by cutting them into bite-sized pieces.
- In a large bowl, mix the tempura batter mix with the ice cold water until it forms a thin batter.
- Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Dip the shrimp and vegetables into the batter, making sure they are fully coated.
- Carefully drop the battered shrimp and vegetables into the hot oil. Fry until golden brown, about 3-5 minutes.
- Remove the twigim with a slotted spoon and drain on paper towels.
- Sprinkle with salt and serve hot.
