  1. In a large pot, add the beef bones, onion, ginger, star anise, cinnamon stick, and cloves. Cover with water and bring to a boil.
  2. Reduce heat to low and simmer for 2-3 hours, skimming off any impurities that rise to the surface.
  3. Remove the beef bones and strain the broth. Discard the solids.
  4. Return the broth to the pot and bring to a boil.
  5. Add the sliced beef brisket and cook for 1-2 minutes, until the beef is cooked through.
  6. Meanwhile, cook the rice noodles according to package instructions.
  7. Divide the cooked noodles among serving bowls.
  8. Top the noodles with the cooked beef brisket slices.
  9. Pour the hot broth over the noodles and beef.
  10. Serve the pho bo with bean sprouts, fresh herbs, lime wedges, sriracha sauce, and hoisin sauce on the side.
