Pho Rito
A fusion of Vietnamese pho and Mexican burrito, the Pho Rito is a delicious and unique dish that combines the flavors of both cuisines.
Ingredients - Serves 2
- Salt and pepper - To taste
- Cloves - 2
- Star anise - 2
- Cinnamon stick - 1
- Onion - 1/2, thinly sliced
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Beef broth - 1 cup
- Soy sauce - 1 tablespoon
- Sriracha sauce - 1 tablespoon
- Hoisin sauce - 2 tablespoons
- Flour tortillas - 2 large
- Lime - 1, cut into wedges
- Fresh mint leaves - 1/2 cup
- Fresh cilantro leaves - 1/2 cup
- Fresh basil leaves - 1/2 cup
- Bean sprouts - 1 cup
- Beef sirloin - 8 ounces, thinly sliced
- Rice noodles - 4 ounces
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large pot, heat some oil over medium heat. Add the garlic, ginger, and onion. Cook until fragrant and the onion is translucent.
- Add the beef broth, cinnamon stick, star anise, cloves, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes to allow the flavors to meld.
- While the broth is simmering, heat a skillet over high heat. Add the beef sirloin slices and cook for 2-3 minutes until browned and cooked to your desired doneness. Set aside.
- Warm the flour tortillas in a dry skillet or microwave.
- To assemble the Pho Rito, place a tortilla on a clean surface. Arrange a portion of cooked rice noodles, beef sirloin slices, bean sprouts, basil leaves, cilantro leaves, and mint leaves in the center of the tortilla.
- Drizzle hoisin sauce, sriracha sauce, and soy sauce over the filling.
- Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito shape.
- Repeat with the remaining tortilla and filling ingredients.
- Serve the Pho Ritos with lime wedges on the side for squeezing over the burritos.
