  1. In a small bowl, mix together soy sauce, rice vinegar, hoisin sauce, and sesame oil. Set aside.
  2. Heat a tablespoon of oil in a large skillet over medium-high heat.
  3. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add garlic and ginger. Cook for 1 minute until fragrant.
  5. Add the sliced bell peppers and onion. Cook for 3-4 minutes until slightly softened.
  6. Return the cooked chicken to the skillet and pour the sauce mixture over it. Stir well to coat everything evenly.
  7. Cook for another 2-3 minutes until the sauce thickens slightly.
  8. Warm the tortilla wraps in a separate skillet or microwave.
  9. Place a scoop of the Kung Pao chicken mixture onto each tortilla wrap.
  10. Sprinkle with chopped roasted peanuts and cilantro.
  11. Roll up the wraps tightly and serve.
