Veggie Stuffed Shells

Ingredients - Serves 6

Let's Get Started

  1. Cook the jumbo pasta shells according to package instructions. Drain and set aside.
  2. Preheat the oven to 375°F.
  3. In a large skillet, sauté the spinach and mushrooms until wilted. Remove from heat and let cool.
  4. In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, egg, garlic powder, dried basil, salt, and pepper. Mix well.
  5. Add the sautéed spinach and mushrooms to the ricotta mixture. Stir until well combined.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Stuff each cooked pasta shell with the ricotta and veggie mixture. Place the stuffed shells in the baking dish.
  8. Pour the remaining marinara sauce over the stuffed shells.
  9. Sprinkle the shredded mozzarella cheese on top.
  10. Cover the baking dish with foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  12. Serve hot and enjoy!
