Veggie Stuffed Shells
These delicious veggie stuffed shells are filled with a mixture of spinach, mushrooms, and ricotta cheese, then baked in a flavorful marinara sauce.
Ingredients - Serves 6
- Mozzarella cheese - 1 cup, shredded
- Marinara sauce - 2 cups
- Salt and pepper - To taste
- Dried basil - 1 teaspoon
- Garlic powder - 1 teaspoon
- Egg - 1
- Parmesan cheese - 1/2 cup, grated
- Ricotta cheese - 1 1/2 cups
- Mushrooms - 1 cup, diced
- Spinach - 2 cups, chopped
- Jumbo pasta shells - 24 shells
Let's Get Started
- Cook the jumbo pasta shells according to package instructions. Drain and set aside.
- Preheat the oven to 375°F.
- In a large skillet, sauté the spinach and mushrooms until wilted. Remove from heat and let cool.
- In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, egg, garlic powder, dried basil, salt, and pepper. Mix well.
- Add the sautéed spinach and mushrooms to the ricotta mixture. Stir until well combined.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Stuff each cooked pasta shell with the ricotta and veggie mixture. Place the stuffed shells in the baking dish.
- Pour the remaining marinara sauce over the stuffed shells.
- Sprinkle the shredded mozzarella cheese on top.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
