Veggie Reuben Sandwich
This vegetarian twist on the classic Reuben sandwich features marinated grilled vegetables, sauerkraut, Swiss cheese, and Russian dressing.
Ingredients - Serves 2
- Russian dressing - 1/4 cup
- Sauerkraut - 1/2 cup
- Swiss cheese - 4 slices
- Rye bread - 4 slices
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Red onion - 1/2, sliced
- Red bell pepper - 1, sliced
- Yellow squash - 1 medium, sliced
- Zucchini - 1 medium, sliced
Let's Get Started
- Preheat the grill or grill pan over medium heat.
- In a bowl, toss the sliced zucchini, yellow squash, red bell pepper, and red onion with olive oil, salt, and pepper.
- Grill the vegetables for 3-4 minutes per side, or until tender and lightly charred.
- Remove the vegetables from the grill and set aside.
- Spread Russian dressing on one side of each slice of rye bread.
- Layer Swiss cheese, grilled vegetables, and sauerkraut on two slices of bread.
- Top with the remaining slices of bread, dressing side down.
- Heat a large skillet over medium heat.
- Place the sandwiches in the skillet and cook for 2-3 minutes per side, or until the bread is toasted and the cheese is melted.
- Remove from the skillet, slice in half, and serve hot.
