Let's Get Started

  1. Preheat the grill or grill pan over medium heat.
  2. In a bowl, toss the sliced zucchini, yellow squash, red bell pepper, and red onion with olive oil, salt, and pepper.
  3. Grill the vegetables for 3-4 minutes per side, or until tender and lightly charred.
  4. Remove the vegetables from the grill and set aside.
  5. Spread Russian dressing on one side of each slice of rye bread.
  6. Layer Swiss cheese, grilled vegetables, and sauerkraut on two slices of bread.
  7. Top with the remaining slices of bread, dressing side down.
  8. Heat a large skillet over medium heat.
  9. Place the sandwiches in the skillet and cook for 2-3 minutes per side, or until the bread is toasted and the cheese is melted.
  10. Remove from the skillet, slice in half, and serve hot.
