Veggie Quesadilla
These delicious veggie quesadillas are filled with a variety of colorful vegetables and melted cheese.
Ingredients - Serves 2
- Salsa - For serving
- Sour cream - For serving
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Shredded cheese - 1 cup
- Spinach - 1 cup
- Mushrooms - 4-5, sliced
- Zucchini - 1/2, thinly sliced
- Red onion - 1/2, thinly sliced
- Bell peppers - 1, thinly sliced
- Tortillas - 4
Let's Get Started
- Heat olive oil in a large skillet over medium heat.
- Add bell peppers, red onion, zucchini, and mushrooms. Cook until vegetables are tender, about 5-7 minutes.
- Add spinach and cook until wilted.
- Season with salt and pepper to taste.
- Remove the vegetable mixture from the skillet and set aside.
- Place a tortilla in the skillet and sprinkle with shredded cheese.
- Top with a portion of the vegetable mixture and another tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut the quesadillas into wedges and serve with sour cream and salsa.
