Veggie Gyro
This delicious veggie gyro is made with grilled vegetables, tzatziki sauce, and pita bread.
Ingredients - Serves 2
- Red cabbage - Handful, shredded
- Tomato - 1, sliced
- Lettuce - Handful
- Pita bread - 2
- Tzatziki sauce - 1/2 cup
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Garlic powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Red onion - 1, sliced
- Yellow bell pepper - 1, sliced
- Zucchini - 1, sliced
Let's Get Started
- Preheat the grill or grill pan over medium heat.
- In a bowl, toss the sliced zucchini, yellow bell pepper, and red onion with olive oil, garlic powder, dried oregano, salt, and pepper.
- Grill the vegetables for about 5-7 minutes, or until they are tender and slightly charred.
- Warm the pita bread on the grill for a minute on each side.
- Spread tzatziki sauce on the inside of each pita bread.
- Fill the pita bread with grilled vegetables, lettuce, tomato, and shredded red cabbage.
- Fold the pita bread in half and serve immediately.
