Barramundi Tacos
These delicious fish tacos feature barramundi, a mild white fish, with a tangy cabbage slaw and creamy avocado sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 1 clove, minced
- Greek yogurt - 1/2 cup
- Avocado - 1, ripe
- Lime - 1, juiced
- Cilantro - 1/2 cup, chopped
- Red cabbage - 2 cups, shredded
- Corn tortillas - 8
- Taco seasoning - 1 packet
- Olive oil - 2 tablespoons
- Barramundi fillets - 4 (6 ounce)
Let's Get Started
- Preheat the oven to 400°F and line a baking sheet with foil.
- Place the barramundi fillets on the baking sheet and drizzle with olive oil. Sprinkle with taco seasoning.
- Bake for 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- While the fish is cooking, prepare the slaw by combining the shredded cabbage, cilantro, and lime juice in a bowl. Season with salt and pepper.
- In a blender, combine the ripe avocado, Greek yogurt, and minced garlic. Blend until smooth.
- Warm the corn tortillas in a dry skillet over medium heat.
- To assemble the tacos, spread a spoonful of the avocado sauce on each tortilla. Top with a portion of the cooked barramundi and a handful of the cabbage slaw.
