Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mash the black beans with a fork or potato masher.
  2. Add the cooked quinoa, grated carrot, grated zucchini, diced red bell pepper, diced onion, minced garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well to combine.
  3. Form the mixture into patties, about 1/2 inch thick.
  4. Heat a grill or skillet over medium heat and lightly oil the surface.
  5. Cook the veggie burgers for about 5-6 minutes per side, or until golden brown and heated through.
  6. Toast the hamburger buns on the grill or in a toaster.
  7. Spread mayonnaise on the bottom half of each bun, then top with a veggie burger patty.
  8. Add lettuce, tomato slices, and pickles.
  9. Spread ketchup on the top half of each bun and place it on top of the burger.
  10. Serve the veggie burgers with your favorite side dishes and enjoy!
