Veggie Burger
This delicious veggie burger is made with a flavorful blend of vegetables, beans, and spices.
Ingredients - Serves 4
- Ketchup - 4 tablespoons
- Mayonnaise - 4 tablespoons
- Pickles - 4 slices
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Hamburger buns - 4
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Cumin - 1 teaspoon
- Egg - 1
- Breadcrumbs - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1/2, diced
- Red bell pepper - 1/2, diced
- Zucchini - 1/2, grated
- Carrot - 1, grated
- Quinoa - 1/2 cup, cooked
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, grated carrot, grated zucchini, diced red bell pepper, diced onion, minced garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well to combine.
- Form the mixture into patties, about 1/2 inch thick.
- Heat a grill or skillet over medium heat and lightly oil the surface.
- Cook the veggie burgers for about 5-6 minutes per side, or until golden brown and heated through.
- Toast the hamburger buns on the grill or in a toaster.
- Spread mayonnaise on the bottom half of each bun, then top with a veggie burger patty.
- Add lettuce, tomato slices, and pickles.
- Spread ketchup on the top half of each bun and place it on top of the burger.
- Serve the veggie burgers with your favorite side dishes and enjoy!
