Vegetable Udon
This vegetable udon is a delicious and healthy Japanese noodle dish packed with fresh vegetables and flavorful broth.
Ingredients - Serves 2
- Sesame seeds - 1 tablespoon
- Sesame oil - 1 tablespoon
- Green onions - 2, sliced
- Spinach - 2 cups
- Mushrooms - 4 ounces, sliced
- Bell pepper - 1, thinly sliced
- Carrot - 1, julienned
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a large pot, combine the vegetable broth, soy sauce, mirin, ginger, and garlic. Bring to a boil.
- Add the carrot, bell pepper, mushrooms, and spinach to the pot. Cook for 5 minutes, or until the vegetables are tender.
- Add the cooked udon noodles to the pot and stir to combine. Cook for an additional 2 minutes.
- Remove from heat and stir in the green onions.
