Veal Scallopini

Ingredients - Serves 4
- Parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- White wine - 1/2 cup
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Flour - 1/2 cup
- Veal cutlets - 4, thinly sliced
Let's Get Started
- Season the veal cutlets with salt and pepper, then dredge in flour, shaking off the excess.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the veal and cook until golden brown, about 2 minutes per side. Remove the veal from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Add the wine and lemon juice, scraping the bottom of the skillet to loosen any browned bits.
- Return the veal to the skillet and simmer until the sauce has thickened, about 3 minutes.
- Sprinkle with parsley and serve.
