  1. Season the veal cutlets with salt and pepper, then dredge in flour, shaking off the excess.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the veal and cook until golden brown, about 2 minutes per side. Remove the veal from the skillet and set aside.
  4. In the same skillet, add the garlic and cook until fragrant, about 1 minute.
  5. Add the wine and lemon juice, scraping the bottom of the skillet to loosen any browned bits.
  6. Return the veal to the skillet and simmer until the sauce has thickened, about 3 minutes.
  7. Sprinkle with parsley and serve.
