Uthappam
Uthappam is a popular South Indian dish made with fermented rice and lentil batter, topped with various vegetables.
Ingredients - Serves 4
- Oil - As needed
- Coriander leaves - 2 tablespoons, chopped
- Green chili - 1, finely chopped
- Tomato - 1, finely chopped
- Onion - 1, finely chopped
- Salt - To taste
- Fenugreek seeds - 1/2 teaspoon
- Urad dal (split black lentils) - 1/2 cup
- Idli rice - 2 cups
Let's Get Started
- Wash the idli rice, urad dal, and fenugreek seeds. Soak them in water for 4-6 hours.
- Drain the water and grind the soaked ingredients into a smooth batter. Add water as needed.
- Transfer the batter to a large bowl and add salt. Mix well and let it ferment overnight or for 8-10 hours.
- Heat a tawa or griddle on medium heat. Grease it with oil.
- Pour a ladleful of batter onto the tawa and spread it in a circular motion to form a thick pancake.
- Sprinkle chopped onions, tomatoes, green chili, and coriander leaves on top of the batter.
- Drizzle some oil around the edges of the uthappam.
- Cook until the bottom side turns golden brown. Flip and cook the other side until cooked through.
- Serve hot with coconut chutney or sambar.
