Uni Pasta
A luxurious pasta dish featuring sea urchin, or 'uni', in a creamy sauce.
Ingredients - Serves 4
- Parsley - 1 tablespoon, chopped
- Salt and pepper - To taste
- Cream - 1/2 cup
- White wine - 1/2 cup
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Uni (sea urchin) - 100 grams
- Spaghetti - 400 grams
Let's Get Started
- Cook the spaghetti in a large pot of boiling salted water until al dente.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and cook until fragrant.
- Add the uni to the pan and cook for 1-2 minutes, until it begins to break down.
- Add the white wine to the pan and let it simmer until the alcohol has evaporated.
- Stir in the cream and season with salt and pepper. Let the sauce simmer for a few minutes to thicken.
- Drain the pasta, reserving some of the pasta water. Add the pasta to the pan with the sauce and toss to combine. If the sauce is too thick, add some of the pasta water to thin it out.
- Serve the pasta in bowls, garnished with the chopped parsley.
