Let's Get Started

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and cook for 20 minutes.
  3. Let the rice cool slightly, then divide into four equal portions.
  4. Wet your hands with water and sprinkle with salt. Take one portion of rice and form it into a round or triangular shape.
  5. Make a small indentation in the center of the rice ball and place an umeboshi in it. Cover the umeboshi with a bit more rice and reshape the ball.
  6. Wrap the onigiri with a sheet of nori.
  7. Repeat with the remaining rice, umeboshi, and nori.
  8. Serve the umeboshi onigiri as a snack or part of a meal.
