Umeboshi Onigiri
Umeboshi Onigiri is a classic Japanese dish, a simple and comforting meal made with rice and pickled plums, wrapped in a sheet of nori.
Ingredients - Serves 4
- Salt - To taste
- Nori (seaweed) sheets - 4
- Umeboshi (pickled plums) - 4
- Water - 2.5 cups
- Japanese short-grain rice - 2 cups
Let's Get Started
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and cook for 20 minutes.
- Let the rice cool slightly, then divide into four equal portions.
- Wet your hands with water and sprinkle with salt. Take one portion of rice and form it into a round or triangular shape.
- Make a small indentation in the center of the rice ball and place an umeboshi in it. Cover the umeboshi with a bit more rice and reshape the ball.
- Wrap the onigiri with a sheet of nori.
- Repeat with the remaining rice, umeboshi, and nori.
- Serve the umeboshi onigiri as a snack or part of a meal.
