Karjalanpiirakka
Karjalanpiirakka is a traditional Finnish dish consisting of thin rye crust filled with rice porridge.

- Egg butter - For serving
- Salt - 1/2 teaspoon
- Milk - 1 cup
- Water - 2 cups
- Short-grain rice - 1 cup
- Butter - 2 tablespoons
- Salt - 1/2 teaspoon
- Water - 1 cup
- Rye flour - 2 cups
Let's Get Started
- In a mixing bowl, combine rye flour, water, and salt. Knead the dough until smooth.
- Divide the dough into 12 equal portions and roll each portion into a thin round crust.
- In a saucepan, bring water to a boil and add rice. Cook until the rice is tender and the water is absorbed.
- Add milk and salt to the cooked rice and continue cooking until the mixture thickens.
- Preheat the oven to 400°F (200°C).
- Place the rye crusts on a baking sheet and spread a generous amount of rice porridge on each crust.
- Bake in the preheated oven for about 15-20 minutes, or until the crusts are golden brown.
- Serve the Karjalanpiirakka warm with a dollop of egg butter on top.
