Udon with Soy Sauce
This udon with soy sauce recipe is a delicious and comforting Japanese dish.
Ingredients - Serves 2
- Egg - 2, boiled and sliced
- Spinach - 2 cups
- Mushrooms - 4 ounces, sliced
- Green onions - 2, sliced
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Vegetable oil - 1 tablespoon
- Sugar - 1 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 3 tablespoons
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a small bowl, mix together the soy sauce, mirin, and sugar. Set aside.
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
- Add the sliced green onions and mushrooms. Cook for 2-3 minutes until the mushrooms are tender.
- Add the cooked udon noodles and the soy sauce mixture to the pan. Toss everything together until well coated.
- Add the spinach and cook for another 1-2 minutes until wilted.
- Divide the udon with soy sauce into bowls and top with sliced boiled eggs.
