Udon with Soy Sauce

  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together the soy sauce, mirin, and sugar. Set aside.
  3. Heat the vegetable oil in a large pan or wok over medium heat.
  4. Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. Add the sliced green onions and mushrooms. Cook for 2-3 minutes until the mushrooms are tender.
  6. Add the cooked udon noodles and the soy sauce mixture to the pan. Toss everything together until well coated.
  7. Add the spinach and cook for another 1-2 minutes until wilted.
  8. Divide the udon with soy sauce into bowls and top with sliced boiled eggs.
  9. Serve hot and enjoy!
