Ube Halaya
Ube Halaya is a Filipino dessert made from purple yam. It is a sweet and creamy dessert that is popular during special occasions.
Ingredients - Serves 8
- Toasted coconut flakes - For topping
- Grated cheese - For topping
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Butter - 2 tablespoons
- Sugar - 1 cup
- Condensed milk - 1 can (300ml)
- Evaporated milk - 1 can (370ml)
- Coconut milk - 1 can (400ml)
- Ube (purple yam) - 2 cups, grated
Let's Get Started
- In a large pan, combine the grated ube, coconut milk, evaporated milk, condensed milk, sugar, butter, vanilla extract, and salt.
- Cook over medium heat, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan. This will take about 30-40 minutes.
- Transfer the mixture to a greased baking dish or mold. Smooth the top with a spatula.
- Let it cool to room temperature, then refrigerate for at least 2 hours or until set.
- Once set, remove from the refrigerator and slice into desired serving sizes.
- Serve chilled and top each slice with grated cheese and toasted coconut flakes.
