Let's Get Started

  1. In a mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt.
  2. Add the eggs, softened butter, evaporated milk, and water. Mix until well combined.
  3. Knead the dough on a lightly floured surface for about 10 minutes, or until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Punch down the dough to release the air. Divide the dough into 12 equal portions.
  6. Roll each portion into a rope shape, then twist it into a coil shape. Place the coils on a greased baking sheet.
  7. Cover the baking sheet with a clean kitchen towel and let the coils rise for another 30 minutes.
  8. Preheat the oven to 350°F (175°C).
  9. Bake the ensaymada for 15-20 minutes, or until golden brown.
  10. Remove from the oven and brush the tops with melted butter. Sprinkle grated cheese and sugar on top.
  11. Serve warm and enjoy!
