Turrón Milanese

Ingredients - Serves 8
- Butter - 2 tablespoons
- Dark chocolate - 200 grams, melted
- Egg whites - 2
- Sugar - 1 cup
- Honey - 1/2 cup
- Almonds - 1 cup, toasted and chopped

- Preheat the oven to 350°F (175°C). Spread the almonds on a baking sheet and toast for 10 minutes, or until lightly browned and fragrant.
- In a heavy saucepan, combine the honey, sugar, and egg whites. Cook over low heat, stirring constantly, until the sugar is dissolved.
- Increase the heat to medium and continue to cook, without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer.
- Remove from heat and stir in the toasted almonds. Pour the mixture onto a buttered baking sheet and spread evenly with a spatula.
- Allow the nougat to cool completely, then cut into squares.
- Melt the chocolate in a double boiler over low heat. Dip each nougat square into the melted chocolate, then place on a parchment-lined baking sheet to set.
- Refrigerate the turrón for at least 1 hour, or until the chocolate is firm. Serve at room temperature.
