  1. Preheat the oven to 350°F (175°C). Spread the almonds on a baking sheet and toast for 10 minutes, or until lightly browned and fragrant.
  2. In a heavy saucepan, combine the honey, sugar, and egg whites. Cook over low heat, stirring constantly, until the sugar is dissolved.
  3. Increase the heat to medium and continue to cook, without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer.
  4. Remove from heat and stir in the toasted almonds. Pour the mixture onto a buttered baking sheet and spread evenly with a spatula.
  5. Allow the nougat to cool completely, then cut into squares.
  6. Melt the chocolate in a double boiler over low heat. Dip each nougat square into the melted chocolate, then place on a parchment-lined baking sheet to set.
  7. Refrigerate the turrón for at least 1 hour, or until the chocolate is firm. Serve at room temperature.
