Chebakia
Chebakia is a traditional Moroccan dessert, often served during Ramadan. These sweet, deep-fried sesame cookies are flavored with honey, cinnamon, and orange flower water.
Ingredients - Serves 30
- Vegetable oil - For frying
- Honey - 2 cups
- Saffron threads - A pinch
- Cinnamon - 1 teaspoon
- Orange flower water - 2 tablespoons
- Eggs - 2
- Butter - 1/2 cup, melted
- Sugar - 1 cup
- Flour - 3 cups
- Sesame seeds - 1 cup
Let's Get Started
- Toast the sesame seeds in a dry skillet until golden. Let cool, then grind in a food processor.
- In a large bowl, combine the ground sesame seeds, flour, sugar, melted butter, eggs, orange flower water, cinnamon, and saffron. Mix until a dough forms.
- Roll out the dough and cut into flower shapes using a cookie cutter.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Fry the cookies until golden brown, then drain on paper towels.
- Heat the honey in a saucepan until warm, then dip the fried cookies in the honey to coat.
- Let the cookies cool and the honey glaze harden before serving.
