Sellou
Sellou is a unique, flourless Moroccan sweet made from toasted sesame seeds, fried almonds, and browned flour. It's packed with energy and nutrients, often served during Ramadan.
Ingredients - Serves 10
- Salt - 1/2 teaspoon
- Cinnamon - 1 tablespoon
- Anise seeds - 1 tablespoon
- Butter - 1/2 cup
- Honey - 1 cup
- Flour - 1 cup
- Almonds - 2 cups
- Sesame seeds - 1 cup
Let's Get Started
- Toast the sesame seeds in a dry skillet over medium heat until golden. Remove and set aside.
- In the same skillet, fry the almonds in a little bit of butter until golden. Remove and set aside.
- In a large pot, brown the flour over medium heat. Be careful not to burn it.
- Grind the toasted sesame seeds and fried almonds in a food processor until finely ground.
- In the large pot with the browned flour, add the ground sesame seeds and almonds, honey, butter, anise seeds, cinnamon, and salt. Mix well.
- Cook over low heat for 10-15 minutes, stirring constantly.
- Remove from heat and let cool. Once cool, shape the mixture into small balls or press into a mold.
- Serve at room temperature. Sellou can be stored in an airtight container for up to a month.
