Tuna Melt Quesadilla

- Butter - 2 tablespoons
- Shredded cheddar cheese - 1 cup
- Pickles - 2 tablespoons, chopped
- Red onion - 1/4 cup, finely chopped
- Dijon mustard - 1 tablespoon
- Mayonnaise - 2 tablespoons
- Canned tuna - 1 can, drained
- Flour tortillas - 4
Let's Get Started
- In a bowl, mix together the canned tuna, mayonnaise, Dijon mustard, red onion, and pickles.
- Place a tortilla on a flat surface and spread half of the tuna mixture evenly on one side of the tortilla.
- Sprinkle half of the shredded cheddar cheese on top of the tuna mixture.
- Fold the tortilla in half to create a half-moon shape.
- Repeat the same process with the remaining tortilla, tuna mixture, and cheese.
- Heat a large skillet over medium heat and melt 1 tablespoon of butter.
- Place one quesadilla in the skillet and cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
- Remove the quesadilla from the skillet and repeat with the second quesadilla.
- Cut each quesadilla into wedges and serve hot.
