Tsukudani
Tsukudani is a traditional Japanese dish where seaweed is simmered in soy sauce and mirin. It's a savory, sweet, and umami-packed side dish that's perfect with a bowl of steamed rice.
Ingredients - Serves 4
- Water - 1 cup
- Sugar - 1 tablespoon
- Mirin - 2 tablespoons
- Soy sauce - 1/4 cup
- Dried seaweed (kombu) - 50 grams
Let's Get Started
- Soak the dried seaweed in water for 15 minutes to rehydrate it. Once rehydrated, cut the seaweed into small pieces.
- In a saucepan, combine the soy sauce, mirin, sugar, and water. Bring the mixture to a boil.
- Add the rehydrated seaweed to the saucepan. Reduce the heat to low and let it simmer for 20 minutes, or until the liquid has almost completely evaporated.
- Let the tsukudani cool before serving. It can be stored in an airtight container in the refrigerator for up to a week.
